I'm Julio Freitas, owner of The Flower Hat! We are a floral design studio and flower farm located in Bozeman, MT. In our very short season, we grow thousands and thousands of beautiful flowers that we use in dozens of weddings throughout Spring, Summer and Fall. We started growing flowers on 1,800 sq ft a few years back, when we couldn't get the quality that we needed for our design work. Garden visitors and myself were shocked when they'd see just how many flowers we could grow in such a small space!
Over the years, we upgraded our growing space to 1/4 acre, including leased land, to accommodate the growing needs of our business. For Christmas last year, the best gift of all was our very own farm, which is just shy of 1 acre. I can't wait for you to see it!

Over the last couple of years, we have received an incredible number of requests for workshops. We sat down last fall and figured out that we do indeed have a very unique business model: we design for weddings and events, we grow a lot of our own flowers (while still ordering in a percentage from wholesalers and local farms around us) and it's our largest line of business. Just in 2018 alone, we had a six-figure wedding/event business, and a huge part of that number was the ability to "buy flowers from ourselves". I'm so proud of what this little company has achieved and I'm ready to share it with you!

Making six-figures in weddings isn't easy, and it's a huge investment of time and labor. It involves careful flower recipes, contract communication with client, coordinated flower ordering, employing the right skill set and if you're growing your own flowers, careful crop selection. In this three-day workshop, I will welcome you to our little farm and I will guide you through every step of the way that have created such a winning formula for The Flower Hat.

Before I continue, I think it’s important for you to know why I decided to put these workshops together, besides your requests, and what you can expect from them.

B A C K S T O R Y


I want to go back to when I started floral design 8 years ago. Before I became a designer, I worked in the hospitality industry. I was a manager for a corporate hotel and had been appointed as the “creative” in the team. Besides Christmas and other visual aspects, I was quickly trusted with seasonal floral arrangements for the hotel’s entry table. Eventually, I translated what I was doing for the hotel to corporate arrangements and started providing weekly floral displays for a coffee shop called “Harper and Madison”. Although I wanted to continue to work with hotel and restaurant accounts, weddings QUICKLY took over our calendar.

While those calls and inquiries were extremely exciting, they were also terrifying. I was taking on weddings without having any experience in the wedding design world. In the beginning, every wedding was new, and with each job came a lot of anxiety and stress as I dove into the unknown.

When it came to floral design, there wasn’t as much information out as there is now. I came into the scene during a time when “sharing your secrets” was a big mistake and frowned upon, or at least so I was told by designers who had been in the industry for a while. Step by step guides on how to make boutonnieres or how to put a bouquet together, or resources for containers and anything in between were non-existent. If I talked to a designer and expressed I was looking to start my own business, I was immediately shut out. I had to figure out virtually everything I know today on my own, and I don’t wish that for you!


Looking back, I realize now that what I needed was a road map. The process of demystifying how to go from beginning to end, from selecting your blooms (and ultimately selecting your seeds) to putting it all together, and everything in between. I want to share with you my process that has made The Flower Hat such a successful company! We’re going to discuss many actionable items about marketing, pricing, design, resources and so much more. These will be steps that I hope you'll take back with you and apply to your business like I do in mine every single day.

 It cost me a lot of money, time, headache, tears, stress, and boutonniere-making at 2am on a Friday before a big wedding to get to where I am today! If I can do anything for you, it is going to be to save you from going through the same rough road I was on before I discovered how beautiful wedding work can be!

Over the last 8 years, we have executed flowers for hundred of events and we've been featured in some of the largest publications in the country (and world wide too)! All of those features have one thing in common: locally grown flowers! They do make a difference in your work. We've always grown in such a small space, so I purposefully took the time to understand and select exactly what to grow. My goal has always been to maximize my growing space by growing carefully selected blooms that would elevate my arrangements. Those are the hard to ship, hard to find varieties that totally bring your arrangement to life. When you attend the workshop, we will walk through the fields and I'll show you examples of what those crops are, how we grow them and how we use them in our wedding work.

I had far too many ideas about how these workshops should be structured. However, last summer, I polled you on Social Media about what was more important to you to make sure you’d be getting the best out of these experiences. I kept all that information and created an agenda that incorporates what you asked for that would benefit your business the most. I'm so proud of the agenda and I can't wait for you to see everything we have planned for you! 


With all of that in mind, I have created a workshop that is encompassing of the aspects of design and farming that is The Flower Hat. The workshops are for anyone with a passion for flowers and growing them and floral design as a business. They're for those who dream/plan on starting or revamping a career in floral design with locally grown flowers. They're also for those  wanting to get started on flower farming in a small scale and are interested in seeing how it all works on an actual farm. If you are a flower lover, by all means, come join us! While we will have business talks, there will be lots of hands-on time for you to enjoy.

During our 3-Day Workshop, I’m going to open up the doors and let you in on the floral design and flower farming aspects that make The Flower Hat. The days will be full, since there is a lot of content to cover, but we will also have room for Q&As as well.

 Here's what you can expect:

--------------- FLORAL DESIGN---------------

- Hands-on design experience making a bridal bouquet, compote centerpiece and Large Installation. These will all be  natural-looking and loose in style, so check out some of our work here and on Instagram (@theflowerhat) for a feel of the style we favor.
- Mechanics - There'll be plenty of time to go over mechanics for bouquets, centerpieces and also for "do's and dont's" of large scale installations.
- Marketing - How to market your work, different advertising options, using Social Media in your business.
- Business Talk - We will cover our entire process, from screening clients to delivering the wedding. We will cover consultations, proposals, contracts, flower recipes, and more.
- Pricing- This is such a requested topic, we will dedicate plenty of time to talk about how we price our flowers and hope that it will help you demystify some of the questions you have
- Studio Tour - We'll give you a tour of our studio and how we have it set up to maximize efficiency, especially during our busy summer season.
- Wedding Logistics - We'll discuss our week workflow, as well as packing these wild loose arrangements, large scale pieces, buckets, and much more. We'll show you our Company Vehicle (aka the beat up Burgundy Dodge Caravan we call "Van Gogh", that has over 250k miles on it!

- Farm Set Up - We'll tour the fields and show you the layout of our beds, walkways, irrigation, greenhouse and roadways, plant spacing and much more.
- Careful Crop Selection - Those seed catalogs are tempting, but we'll show you how we decide what to grow in our small space
- Harvesting - While we harvest for our hands-on session, we will cover some harvesting techniques that we use in our farm.

It's no surprise that the pandemic affected our business in ways we never imagined. During our time together, we will talk about how COVID-19 forced us to change our business model for a while, the loss of weddings and how we are moving forward, following the effects of the pandemic.

I'll be honored to welcome you to our farm and business and share with you everything I know and have learned! However, I don't know everything because there are so many scenarios that I haven't had to deal with, like Japanese Beetles, for instance. While I'm able to help you grow your business in so many ways, these are some of the topics that will NOT be covered in the workshop:

  • In-depth and extensive information on topics including but not limited to:
    • Pests and weed management specific to your area - We have dealt with aphids, spider mites, thrips, grasshopers, some slugs, earwigs (my nemesis!!), voles, but that's pretty much about it.
    • Implements - We just have a small tiller that we use, but we're hoping to buy a tractor in the near future. Until then, I'm not help with big implements.
    • Large scale farming - We just now upgraded to one acre so still very small :)
    • Advanced technology - We have some cool heaters in the greenhouse, but that's it! lol
    • Soil conditions and/or specific climates information for other areas of the country. - Our soil is loamy/sandy/rocky and that's pretty much all I've had to work with.
    • Organic Certification - We're not certified, nor are we looking to be, even though we apply natural practices on the farm
    • Hand-on Farming Experience - We only have so much time, therefore we will not be showing or providing hands-on experience with farming duties, including but not limited to season extension, bed prepping, seed starting, flower processing, etc. We will be harvesting some flowers, though.
    • We’ll open up about how we do everything on the farm and floral design fronts. We are happy to share what we know and you are welcome to adjust that knowledge to your growing area and garden.
  • Floral design software options for their business - We use Excel and Word for most things projects, Quickbooks for accounting and Square for Credit Card Processing.
  • Perfectly structured centerpieces, tall or short, round or tear-drop cascading bouquet -  We favor a more loose, natural, flow-driven style.

DATES
When I asked whether you’d prefer to have the workshops on a weekend versus weekday, the grand majority of you said weekday. That would allow you to could go back to your studios/farms and still have a wedding on the weekend following the workshop. I’m hoping these dates will coordinate with your work week flow.

CLASS SIZE
All Classes will be small, limited to 10 people per class. Besides having a small space, I wanted to keep the classes intimate and allow for enough time with each attendee. Each one of you comes with your own set of questions and aspects of floral design that you need help with.

Light Breakfast and Lunch all three days (Gluten, Dairy, Nut Free and Vegan Options will be available. You can let us know of any allergies during your registration)
- Professional Photography of your Work
- All the materials you will need including flowers, tools, supplies, etc
- Resource Guide to accompany all the topics covered in the Workshop


ACCOMMODATIONS
Although accommodations aren’t included in the registration fee, we have secured a great rate with The Hilton Garden Inn hotel.  More information on how to book your room will be available during your Registration Application. You are welcome to stay elsewhere if you choose, you do not have to stay at the partner hotel.

TRANSPORTATION
Uber is available in Bozeman for your transportation needs in town. If you’d like to rent a car at your own expense, all major rental car companies are available at the Airport. TFH will provide transportation to and from the HGI daily for those who need it.


Flying into Bozeman is rather easy, with direct flights from 15 major cities in the country.

Question: I'm currently looking to start growing flowers, but I'm not quite ready to take on weddings. Will you cover Selling to Florists, CSAs, U-Pick, Farmer's Market and other sales outlets?
Answer: While our farming methods can be applied to grow flowers to be sold through any of the channels aforementioned, we will not cover other sales outlets at this time besides weddings.

- Q:
Will you show us how to take your famous armful shots that you post on Instagram?
A: Yes! I'll share all my secrets and tips we use to take the perfect shot!

Q: I've been seeing a lot of large installations, hanging chandeliers, flower "clouds"... You even have some on your website/Instagram. Will you share the mechanics behinds these types of arrangements?
- A: Yes, we love doing them and will dedicate plenty of time to talk about some case studies of pieces we've done in the past, what worked, what didn't work, what to look for, what to bring, etc. You'll also get to have hands-on experience with a large installation during the workshop, where you and the other attendees will bring one to life! Exciting!!

Q: Will there be time to network and get to know one another? I find that to be so valuable in these workshops.
A: Agreed 100%! I've made life-long friendships attending these workshops! Flower people are the best! We will get to know each other a little bit on the first day, and each class will be connected through an email group so you can coordinate outings, exchange contact info, plan shared rides, etc.

Q:
Will you have a separate workshop just dedicated to Flower Farming?
A: We are currently planning one for the near future, but at this time, we're hosting a design/farming combo workshop.

Q: Will you offer recommendations on local attractions, restaurants, and what to do in Bozeman?
A: Yes, absolutely! It'll be in your Welcome Packet and we will probably email that portion to you prior to the workshop so you can make plans and arrangements with other attendees.

Q:
What is the Cancellation and Refund Policy?
A: Just like a client booking a wedding or another event with you, we base our business on booked events and plan accordingly. This workshop is non-refundable. While we understand that life happens sometimes, please, please, please verify that you can 100% attend the workshop before you register. Check flights, accommodations, and all other travel aspects. We will not be able to refund you for any monies paid at any point, for any reason. This is not a casual gathering of people playing with flowers. This is a serious business course that involves staffing, vendors, rentals, product, and so many other elements that are based on a "by attendant" basis. We are charged based on the number of people that register and we are also unable to make cancellations with said vendors on our end, so this course is non-refundable.

Q: What is your COVID-19 Policy for Cancellations?
A: In the event that we need to postpone the Workshop due to COVID-19, any payment made will be applied to a future workshop date. We want to ensure the safety of all attendees as well as our staff, and the staff that helps us put the workshop together. If you register for the workshop and, at any point, you don't feel comfortable traveling, we will apply any payments you have made to a future Workshop.

Q: I want to bring my camera to record videos so I can rewatch them later. Is that ok?
A: Video Recording of any kind is strictly prohibited during any portion of our workshop.

Q: If we are doing hands-on design, will you critique our work and give feedback/guidance?
A: One of the reasons why I wanted to keep the groups small is to allow for a chance to connect one-on-one. While I will give you feedback on the pieces you create, I'll also allow and respect your own design style. I'll make suggestions on how you can improve your design while staying true to the style you favor. So yes!

Q: What tools should I bring?
A: If you have a knife, apron, shears/cutters/clippers that you like to use, by all means bring it! But we will provide everything you need, including clippers, containers, tape, chicken wire and more.

Q: Will you have a handout we can take home?
A: Yes! We will provide you with a Resource Guide that you can reference back after the workshop.

Q: Is this workshop geared more towards novice or experienced floral designers?
A: This workshop is geared towards designers with any level of experience, and flower farmers wanting to explore Weddings as a revenue stream for their business. While we'll also be covering the business of it all, hobbyists and flower enthusiasts are welcomed, especially those wanting to create a cut flower garden in their backyard. But, this is farming, not gardening. Farming is very different than a landscaped garden. We will teach farming and you can take it back and turn it into your own version of a garden, for sure.

Q: I see on your Instagram many armloads of gorgeous flowers like roses, orchids, etc. Will you share your secrets on how to grow those beautiful flowers?
A: While we're able to grow many beautiful flowers, roses, hydrangeas and orchids are not part of our production. We're in zone 4b where the winters are harsh and summers are mild, making it impossible for us to grow these heat-loving plants. We maximize our growing space by growing hard to find varieties that are finicky to ship and order in the roses we need for our work.

Q: I'm interested in the Farming portion of the Workshop. Will you be demonstrating how you perform farming tasks such as bed preparation, irrigation, season extension techniques, etc?
A: While I'd love to cover all those things, there's only so much we can go over during the time we have. While we will discuss all the farming techniques we use at the farm, we won't be doing any demos or hands-on sessions. The focus of the workshop will be hands-on floral design. You will get to harvest flowers though! :)
